  • 4 cups diced fresh tomatoes

  • 1 medium onion, sliced

  • 2 each jalapeno peppers, sliced

  • 2 cups vegetable broth

  • 1 teaspoon white sugar

  • teaspoon sea salt

  • teaspoon ground black pepper

  • 2 tablespoons vegan butter

  • 1 tablespoon cornstarch

How to Make Ultimate Vegan Tomato Soup

  1. Stir tomatoes, onion, and jalapeno peppers together in a stockpot. Add vegetable broth, sugar, salt, and black pepper. Bring to a boil, stirring often. Continue to boil for 20 minutes. Remove from heat and allow to cool slightly, 10 to 15 minutes.
